Student
Activity: Exploring food safety
Learning
Intensions:
Recognise and describe how
people working in design and technologies occupations consider factors that
impact on design decisions.
Success Criteria:
Identify
how food safety can impact the quality of food solutions (ACTDEK045)
Learning
Experience:
1. Explore the text below, as you are reading the
content, consider the three topics of hygiene. You are to create a visual
representation (Sketch to Stretch) for the three topics and how they could be represented in our
kitchen environment at school.
2. Use your visual representation of the topics
to discuss, share and explain your understandings of how these topics
connect to our kitchen environment at school to a peer.
3. Add any further thoughts from the discussion
to your sketch.
4. Discuss, share and explain your thinking and understandings from
the text with a new peer.
5.
Individually now, Power Write for 3 minutes to recognise and describe your thinking and understandings from the text, in
particular, describe common food safety issues you may experience in the
kitchen here at school.
6.
Reflect on the food safety concerns that could affect your working performance in the school kitchen environment,
recognise and describe how these
could impact on kitchen safety regulations for the
kitchen through
a Double, Double, Double activity.

Hygiene
and Kitchen Safety:
Keeping
yourself and others safe in the kitchen is crucial. Knowing how to use utensils
and equipment safely reduces the risk of injury, while producing and storing
food appropriately reduces the risk of contamination. These safety precautions
are not just for home and school, Australia has regulations at national, state
and local levels that set strict guidelines and standards that businesses must
meet to make sure their food is prepared safely. Breaches of these rules
can result in a business being fined or shut down, it is the law to maintain
safety standards at all times in a hospitality environment.
Hygiene:
Personal
Hygiene
One
of the most effective ways we have to protect ourselves and others from illness
is good personal hygiene. This means washing your hands, especially, but also
your body. It means being careful not to cough or sneeze on others, cleaning
things that you touch if you are unwell, putting items such as tissues (that
may have germs) into a bin, and using protection (like gloves) when you might
be at risk of catching an infection.
Personal
hygiene, such as bathing, is very much dependent on the culture in which you
live. In some cultures, it is expected that you will wash your body at least
every day and use deodorants to stop body smells. Other cultures have different
expectations.
Environmental
Hygiene
It is
important to make sure you keep your workspace clean at all times, it is
important to use correct cleaning agents and sanitizers to prevent bacterial
growth and discourage vermin.
