Lesson Three and Four: Knife skill demonstration and safety audit

Learning Intensions:

Identify the changes necessary to designed solutions to realise preferred futures that have been described.

When producing designed solutions for identified needs or opportunities, students evaluate the features of technologies and their appropriateness for purpose for one or more of the technologies contexts.

Success Criteria:  
Make judgments on how the principles of food safety, preparation, and presentation influence the creation of food solutions (ACTDEK045)
Work flexibly to effectively and safely test, select, justify and use appropriate technologies and processes to make designed solutions (ACTDEP050)

Learning Experience:

1. Handouts of the groups created checklist from last lesson will be provided to each student upon arrival to the kitchen environment, the teacher has ingredients for a Knife Safety Demonstration pre-set up with the practical goal to create 6 vegetable garnishes with a focus on knife use from learners as well as precision skill development.

2. Before the group are to enter, they are instructed that the checklist created yesterday will be used as an auditing tool of the teachers practice in the kitchen environment this lesson, a Gallery Walk style demonstration will be used whereas the group now not only follow observation for practical skills, but also must test their food safety and preparation checklist in real time.

3. Teacher leads the demonstration as per a person working as a food producer in our school kitchen, upon completion the group is given time to review and justify their checklist review.

4. Individually, students are to create a Swat Analysis of the checklists effectiveness in the kitchen environment and appropriateness for use with food preparation people in the future. 

5. Students come back as a class. Students discuss with the group their analysis and justification while the teacher creates an anchor document based on collaborative feedback on the topic.
